He was the man behind the original Armadillo Restaurant in the Cavern Quarter, the head chef at Number 7 Cafe for almost seven years (spooky!), opened Tabac after its refit and has spent the last 18 months at London Carriage Works Brasserie. After all
these years he's still passionate about food and can't wait to
get the dining area open where it will be strictly 'no towers or
drizzles' just a changing menu of great tasting food and proper
sized portions!

Kinga & Mateusz - Kitchen crew This dynamic Polish couple are our favourite newlyweds. Kinga is from BiaLa Podlasda and Mateusz comes from Solec Kujawski. They studied together and both are trained as Choir Conductors, you might spy them on a Sunday at The Catholic Cathedral ears pricked to the heavenly sounds! They love all music from Deep Purple to Ella Fitzgerald and can recommend the Spanish Chickpea Cassarole or the Persian Stew. - Przepyszne! (Delicious!) |

Christine - Deli Crew One of our 3, yes 3 Americans, Christine is from way out west Wyoming. She received her degree in the States studying International Relations, which is very befitting as her husband is from Spain! They are both here in Liverpool for the time being with Christine possibly looking towards future studies in Law. The tahini and jamon are particular favorites of hers, but if you are looking for anything with a Spanish flare, Christine will be your in house expert! |

Holly - Corporate Development / Deli Crew Another American! Holly is from New Orleans, but is an adopted Scouser as she has been here for 9 years. She is the one to call for any information on the Gift Baskets, Special Events or if you have any Marketing questions (I also maintain the web site, but I don't want to break the 3rd person magic!) After a million career changes, she finally found her home in Delifonseca with her old friend Candice. She is addicted to the Sun Dried Tomato Stuffed Olives and the Chirizo Picante, but says the Muffaletta upstairs is hands down the greatest sandwich in the world - even better than those on Bourbon Street! |

Paul - Deli Crew He is as much a Local Liverpool Lad as you will find anywhere! Paul has been there and done just about all there is to be done. He travelled the world, and got mixed up in the odd international altercation during his many years as a Chef de Range on the QE2. He is our official teacher of everything Scouse and if you hear a song being belted out from downstairs it will be Paul, Summertime being a particular favourite. He has been known to have the Roasted Aubergine Pate for breakfast, but he is also partial to the Spicy Dal and the Welsh Rare Black Beef. |

Emma-Restuarant Crew A Liverpool lady born and bred, Emma is our top Restaurant lass. She really knows her stuff too, particularly about the vegetarian dishes, being a Veggie herself! On her nights off, you might find Emma and her husband catching a gig of local bands around Hardman Street or seeing the latest film release. Her prefered tipple is the Leifmans Frambozen - our rasberry beer and if you are looking for a reccommendation her absolute favorite is the Green Tai Vegetable Curry from the Specials Board. |

Jason - Restuarant Crew Care for a little entertainment while you eat? Jason is our rising star in Musical Theatre Preformance. He is striving to be a straight man in tights on the stage, and if pushed he has been known to serranade the odd table! A local Kirkby man with a taste for Lentejas and cheescake, we all are sure he is destined for the West End! |
